It all would be a lot easier if I could animate the UV Projection.

Yup. /agree with Marcel. Looks good! :)

BTW, you *can* animate the UV projection. But it would involve extracting and replacing the UV coordinate stream stored in the mesh on each frame. So you'd have to do a bit of scripting. ...Edit... actually that's is another way: The UV projections can now be implemented as mesh modifiers. (Right click on the UV projection tool to bring up the options.) So you could keyframe the offset for the projection that way.

For Workspace you can Keyframe the DifTexCoordMoveX and or Y. Here is an example Cube with a Face painted with a Texture.
